Going In For the Flip

My weekend was filled with Irish food.  Yummm…not too good for my South Beach diet, but excellent for my enjoyment and comfort!  🙂  We started out the weekend with a suggestion from my 6 year old that we should visit “The Blarney Stone” Pub in Fredericksburg, a relatively new Irish restaurant that we hadn’t tried yet.

We found a cozy nook in the back, and surrounded by deep green walls and rich wood, we ate fish and chips and shepherd’s pie.  Both wonderful.

A few doors down, we visited “Irish Eyes,” a delightful gift shop run by friendly people.  Cadbury’s lovely Flake bars made their way into our purchases, and were quickly devoured as we remembered all the wonderful soft ice creams with flake bars stuck into the top that we had had in Ireland.

The weekend concluded with my lovely husband cooking us some boxty, or Irish potato cakes, for supper last evening.  We experimented with add-ins…some with turkey, some with grated cheese.  Yummm….we added some steamed veggies as a side so I wouldn’t feel too terribly guilty about the extravagance of my splurge.

So, now it’s back to my low-carb ways, but I’m not sorry for the tasteful and comfort-filled weekend I had.  In fact, I may do it again someday, after I’m good for awhile!  🙂

Hungry yet?  Enjoy the food that the Lord has given you today; He is so good to us.   Slainte, Lisa

Stones Crying Out

Stones are everywhere in Ireland.  Special ones, not so special ones.  Remnants of some great castle, and remnants of simple cottages.  Stones on the edge of a great sea cliff, and stones gathered throughout fields to contain the sheep and cattle.  The Burren is so filled with stones that you cannot walk two inches without stepping on one.

I have been listening this morning to U2’s “Gloria” and “Rejoice”.  Crying out in praise to God, making the choice to praise.  It reminds me of the passage where Jesus is talking to all those religious leaders.  The leaders are upset because His followers are praising God loudly for all His miracles that they had seen.  Jesus says, “I tell you, if they keep quiet, the stones will cry out.”  (Luke 19:40)

The stones in this picture of Mizen Head are definitely crying out to God in their stark beauty.  And I want to do the same.  Slainte, Lisa

Dolphins Dancing for Joy

I just saw this on Irish Central and had to share it.  These dolphins are so happy and full of joy; it will make you smile to watch them.  They were off the coast of Donegal, and the article said it was rare to see this many dolphins in this area.  Watch for the mother/baby swimming around around the 1:00 minute mark, and also the beautiful still shots in the sunset starting around 3:00 minutes.

“So God created the great creatures of the sea and every living and moving thing with which the water teems..” (Gen. 1:21)     🙂  Slainte, Lisa

The Beauty of a Dream

God is faithful, and He showed me that again this morning.  Joshua, my oldest son, is going to James Madison University this morning, and I had been feeling rather blue about him not being around as much.  Yes, I am so proud of him; yes, I am excited for him, and yes, I also know that we will still see him a lot.  Yet, I found myself sitting around looking at pictures like this one…and you know the end result of that.  :\

Joshua, age 7, on a ramble in Ireland.

Yesterday, I wrote this quote on J’s facebook wall:

“God gives us dreams a size too big so that we can grow in them.” – Anonymous

This morning, on my daily inspirational flip calendar, there was this:

“The future belongs to those who believe in the beauty of their dreams.”  – Eleanor Roosevelt

Coincidence or God’s reassurance & plans for Joshua?  You know what I think.   Then I went outside to walk my sweet dog, and there were angel rays..those beautiful sun beams that shine through the lifting fog and kiss the ground.  And God knows that I love them.  It was like He was speaking very loudly to me of His love and care for me and our whole family.  So, to make a very long story shorter, I feel better…Joshua has exciting plans ahead, dreams to dream, and a purpose from God to fulfill.  And I get to watch it unfold.  How cool is that?  🙂  Slainte, Lisa

In the Mist

In the mist, there’s an island…

An island where there are flowers and rocks and life…

Within that life, there is love…

And in that love, there is Jesus.

Look through the mist of your life; sometimes things look very foggy and dim, but ahead there is love and life and Jesus.  Slainte, Lisa
